Pasta Salad

 

Ingredients:

10 oz. frozen mixed vegetables or 1 1/2 cup chopped raw vegetables
1/4 c. chopped green pepper
1/4 c. lowfat Italian dressing
3/4 c. elbow macaroni
2 Tbsp. chopped onion
salt free herb seasoning

Directions:

Cook macaroni according to package directions leaving out salt. If using frozen vegetables, cook until tender-crisp. Drain. Add the green pepper, onion and lowfat Italian dressing to vegetables and cooked macaroni. Season to taste, chill.


Yield: 3 cups
Serving Size: 1/2 cup is a grain serving and (1/4 cup) vegetable for a 3 - 5 year old at lunch/supper.
