Corn and Black Bean Salsa

 

Ingredients:

1 cup chopped onion
1/4 cup lime juice
1/4 cup chopped, fresh cilantro
2 1/2 cups frozen corn
1 cup chopped tomato(es)
1 (15 oz.) can rinsed and drained black beans
4 cloves chopped garlic
2 tsp. cumin

Directions:

Prepare corn according to package directions. Combine drained corn with tomato and black beans. In another large bowl mix the remaining ingredients except for the cilantro. Pour these ingredients over the corn mixture. Refrigerate for two hours to blend flavors. Add cilantro just before serving. Serve with tortilla chips.


Yield: 6 cups
Serving Size: 1/2 cup salsa is 1/2 cup vegetable for a 3-5 year old at snack.
