Beef Stir Fry

 

Ingredients:

1 lb. round steak beef
2 Tbsp. soy sauce
1/2 c. beef broth
1 clove minced garlic
1 Tbsp. water
2 Tbsp. (divided) cornstarch
2 Tbsp. (divided) oil
3 c. stir fry (snow peas, broccoli, bean sprouts) vegetables

Directions:

Cut beef round steak into thin stips. In medium bowl mix beef, water, soy sauce and 1 Tbsp. cornstarch. Dissolve remaining 1 Tbsp. cornstarch in broth and reserve. Heat 1 Tbsp. oil in large skillet or wok. Add beef and garlic, cook over high heat, stirring constantly until cooked (no pink) about 3 minutes. Remove beef to platter. Add remaining oil. Add vegetables; cover and simmer over medium heat 3-5 minutes. Add broth mixture and beef pieces; cook and stir until thickened about 2 minutes.


Yield: 6 servings
Serving Size: 1 serving is 1.5 oz meat/ meat alternate and 1/4 cup vegetable for a 3-5 year old at lunch/supper.
