Mini-Mexican Pizza

 

Ingredients:

2 English muffins, split
1/2 cup fat free refried beans
salsa
chopped onion, optional
black olives, optional
1/2 cup shredded cheese
shredded lettuce

Directions:

Split muffins; toast lightly. Spread beans on toasted muffin halves. Sprinkle with cheese. Broil until cheese is melted about 2 minutes. Garnish with salsa, olives, onion and shredded lettuce.


Yield: 4 servings
Serving Size: One serving is 1 oz meat/ meat alternate and 1 oz grain for a 3- 5 year old at snack.
