One Bowl Banana Muffins

 

Ingredients:

1 c. sugar
1/2 c. vegetable oil
2 large egg(s)
3 large, very ripe banana(s)
3/4 c. flour
1 1/4 c. whole wheat flour
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla

Directions:

Preheat oven to 350 degrees. Coat muffin pans with cooking spray. In large mixing bowl, add ingredients one at a time mixing well with each addition. Bake for 15 - 20 minutes until muffins are lightly brown and not soft on top. Let cool slightly and remove from muffin pans.


Yield: 14 muffins
Serving Size: 1/2 muffin is a grain for a 1 - 5 year old.
