Honey Fruit Salad

 

Ingredients:

1 (20 oz.) can drained (save juice) pineapple chunks
1 (11 oz.) can drained mandarin orange(s)
2 large, sliced banana(s)
1 c. sliced strawberries
2 sliced and peeled kiwi
1/4 tsp. grated lime peel
2 Tbsp. lime juice
1 Tbsp. honey

Directions:

Place prepared fruit in a bowl. Prepare dressing by mixing 1/4 cup reserved pineapple juice with the lime zest, lime juice and honey. Mix dressing together then add to prepared fruit and toss.


Yield: 8 cups
Serving Size: 1/2 cup salad is 1/2 cup fruit for a 3-5 year old at breakfast/snack. 1/4 cup salad is 1/4 cup fruit for a 3-5 year old at lunch/dinner.
