Crockpot Italian Pot Roast

 

Ingredients:

1 (3 lb.) arm roast, chuck roast or beef roast
1 packet dry Italian dressing
1 1b. baby carrot(s)
1 packet dry Au Jus seasoning
1 (12 oz.) can tomato juice
3 medium peeled and cubed potato(es)

Directions:

Place meat in the crock pot. Place carrots and potatoes in with the roast. Sprinkle seasoning packets in a mixing bowl with the tomato juice and mix. Don't worry if there are lumps, they will work out during cooking. Pour the mix over the roast and vegetables. Cook on low for 8 1/2 hours, or high for 4 1/2 hours or until meat is fork tender.


Yield: 15 servings
Serving Size: One 1/15 of recipe is 2 oz meat/ meat alternate and 1/4 cup vegetable for a 3-5 year old at lunch/supper.
