Core and chop unpeeled apples. Combine with turkey, celery, and pineapple. In another bowl, combine yogurt, mayonnaise, mustard and celery seeds. Mix until blended. Mix with apple turkey mixture. Slice open pita bread to form pocket. Place 1/2 c. of shredded lettuce in pocket. Top the lettuce with 1/2 cup of apple and turkey mixture.
Note: Additional meat/meat alternate must be offered to complete meal requirements.
Yield: 25 servings
Serving Size: 1/2 cup of apple and turkey filling in one pita pocket provides 1 oz. meat/meat alternate and one (1/3 cup) serving of fruit/vegetable and 1 grain/bread.
