Heat vegetable oil using a medium saucepan. Add chopped onion and cook until tender. Add the broth; bring to a boil. Add the rice; cover the pan and cook on low heat until the rice is tender about 35 - minutes. Remove from heat and let stand 10 minutes. Stir in chicken and top with cheese. Cover and let stand 5 minutes until cheese is melted.
Yield: 8 servings
Serving Size: 1/8 of recipe is 1.5 oz meat/ meat alternate and 0.5 oz grain for a 3 - 5 year old at lunch/supper.
