Cinnamon Orange Squash

 

Ingredients:

2 medium (2 lbs.) winter (butternut, buttercup or acorn) squash
1/2 c. orange juice
1 tsp. cinnamon
1/4 tsp. nutmeg

Directions:

Place each squash in the microwave and cook on high heat for 1 1/2 minutes. Cut each squash in half. Remove the seeds and loose fibers in the middle of the squash. Place the squash cut side up on an ungreased baking pan. Pour 2 tablespoons of juice into each squash half and spread evenly around. Bake at 400 degrees F for 20-30 minutes, until tender. Season with cinnamon and nutmeg.


Yield: 8 servings
Serving Size: 1/4 of a squash is a 1/4 cup vegetable for a 3-5 year old at lunch/supper.
