Preheat oven to 375 degrees F. Spritz baking pan with cooking spray and add fish. Bake until flaky, 7 to 10 minutes. In food processor puree white beans, parsley and bread crumbs. Place mixture in bowl with egg and crumble in fish. Mix until incorporated. Form 4 patties. Coat oven-proof skillet with cooking spray over medium heat. Add burgers. Cook about 5 minutes on one side. Flip and cook 5 minutes longer. Serve each patty on a bun with lettuce and tomato.
Yield: 4 burgers
Serving Size: One serving is 1 oz grain and 1.5 oz meat/meat alternate for a 3-5 year old for lunch/supper.
