Preheat oven to 425 degrees. In medium bowl, combine salsa, chicken, corn, green onion, bell pepper, beans, pepper and cheese. Soften tortillas on stove top or in microwave, and spoon filling onto center of tortilla. Roll up tightly. Place toothpick in center to secure. Place tortillas roll side down on baking sheet, brush with oil. Bake 15 to 20 minutes or until crisp and lightly browned. Serve 1 taquito per child.
Yield: 6 taquitos
Serving Size: 1 taquito is 1 oz grain, 1/4 cup vegetable, and 1.5 oz meat/meat alternate for a 3-5 year old for lunch/supper.
