Fish in Blankets (Fish Tacos)

 

Ingredients:

1/2 cup red leaf lettuce
1 lb. frozen cod fillets
1/2 Tbsp. olive oil
1 Tbsp. lemon juice
1/2 cup shredded lettuce
1 cup chopped tomato(es)
6 (8 inch) whole grain tortilla(s)
1/2 cup + 2 Tbsp. plain, non-fat yogurt (less than 3.83 gm sugar per oz)
1/2 cup salsa

Directions:

Combine fish, olive oil and lemon juice in bowl. Pour into skillet. Cook on medium-high heat for 4 to 5 minutes, stirring occasionally. Fill each tortilla with 1/3 cup fish. Top with 1/3 cup vegetables and 1 Tbsp. of yogurt.


Yield: 6 tacos
Serving Size: One taco is 1 oz grain, a 1/4 cup vegetable and 1.5 oz meat/meat alternate for a 3-5 year old for lunch/supper.
