Place all salad ingredients (tomato, cucumber, bell pepper, olive and lettuce) into a bowl. In a separate bowl, mix dressing ingredients (oil, vinegar, oregano) together. Pour dressing over salad. Toss to coat.
Yield: 3 cups
Serving Size: 1/3 cup salad is 1/4 cup vegetable for a 3-5 year old at lunch/supper.
