Polka Dot Pasta

 

Ingredients:

2 3/4 cups cooked whole wheat bowtie pasta
1 cup chopped tomato(es)
1/2 cup chopped spinach
1 cup chopped carrot(s)
1/2 cup chopped broccoli
1/2 tsp. black pepper
1 Tbsp. olive oil
1 Tbsp. distilled vinegar
1 Tbsp. grated Parmesan cheese

Directions:

Cook pasta as directed on box. Allow pasta to cool. Chop vegetables. Mix together in large bowl. Mix oil and vinegar and coat pasta. Combine pasta and vegetable mix. Top with pepper and parmesan cheese. Mix.


Yield: 5 1/2 cups
Serving Size: 1/2 cup pasta salad is 1/4 cup vegetable and 0.5 oz grain for a 3-5 year old at lunch/supper.
