Rainbow Bake

 

Ingredients:

2 1/2 cups drained mixed vegetables
1/2 cup shredded cheddar cheese
1 1/4 cup whole grain elbow macaroni
1/2 cup chopped onion
2 cups kidney beans
1/2 tsp. black pepper

Directions:

Cook pasta as directed. Preheat oven to 350 degrees. In large mixing bowl, combine drained mixed vegetables, cheese, macaroni, onion, pepper and beans. Pour mixture into casserole dish. Bake 30 to 35 minutes.


Yield: 6 servings
Serving Size: One serving (1/6 of recipe) is a 1 oz grain, 1/4 cup vegetable and 1.5 oz meat/meat alternate for a 3-5 year old for lunch/supper.
