Cook orzo according to directions on package. In a large saucepan, combine tomato juice, vegetables, beans and spices. Bring to a boil. Reduce heat, cover and allow it to simmer for 10 to 15 minutes. Drain orzo. Stir it into mixture. Serve 1 cup servings.
Yield: 6 portions
Serving Size: 1/6 of stew is 0.5 oz grain, 1/4 cup vegetable and 1.5 oz meat/meat alternate for a 3-5 year old for lunch/supper.
