Big League Black Bean Salsa

 




Ingredients:

1 (15 oz.) can drained and rinsed black beans
1 1/2 cups chopped tomato(es)
1/3 cup chopped onion
1/3 cup chopped green pepper
1 1/2 Tbsp. lime juice
1/2 tsp. cumin
1/2 tsp. chili powder
(to taste) salt

Directions:

1. In a large bowl, mix beans and vegetables.
2. Add lime juice and spices. Mix thoroughly.


Yield: 3 cups of salsa
Serving Size: 1/2 cup of salsa provides 1/2 cup vegetable for a 3-5 year old at snack.
