Sloppy Sammies

 




Ingredients:

1/4 cup chopped onion
1/2 cup grated carrot(s)
1/4 cup chopped green pepper
1 lb ground turkey
1/2 cup tomato sauce
3/4 cup crushed tomato(es)
1/4 cup barbecue sauce
6 whole wheat hamburger bun(s)

Directions:

Spray skillet with cooking spray. Sauté onions, carrots, green pepper and ground turkey in a pan over medium-high heat for 5 minutes. Add tomato sauce, crushed tomatoes, and barbeque sauce. Bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally. Uncover and cook for an additional 3 minutes or until thick. Serve 1/2 cup mixture on each whole wheat bun.


Yield: 6 sandwiches
Serving Size: 1 sandwich is a 1 oz grain, 1.5 oz meat/meat alternate and 1/4 cup vegetable for a 3-5 year old at lunch/supper.
