Preheat oven to 450 degrees. Line two baking sheets with foil and brush lightly with olive oil.
In a large plastic bag or bowl, toss sweeet potatoes with oil and seasoning.
Spread sliced potatoes in a single layer on baking sheets.
Bake 10 minutes and turn over. Bake until browned and crisp, about 10 more minutes.
Yield: 3 3/4 cups
Serving Size: 1/2 cup crisps provides 1/2 cup vegetable for a 3-5 year old at snack.
