Cook the quinoa according to the package directions and set aside.
Preheat oven to 350 degrees. Coat a baking sheet with non-stick spray.
Lightly mash the black beans and then mix all ingredients together (except buns). Form into 6 patties and bake for 30 minutes until heated through, or spray a skillet with non-stick spray and cook on stove top until heated through and golden brown on the outside.
Top with cheese and heat until melted. Serve on buns.
Yield: 6 burgers
Serving Size: 1 burger on a bun provides 1 oz grain and 2 oz meat/ meat alternate for a 3-5 year old at lunch or supper.
