Cook Rice per package instructions. Allow rice to cool.
Mix vegetables together in large bowl except the beans.
In a separate bowl, mix together the cooled rice and chickpeas. Add the vegetables to the rice and bean mixture. In a small bowl, mix together olive oil and vinegar and pour over rice and chickpeas.
Top with parmesan cheese. Mix.
Yield: 6 cups
Serving Size: 1 1/3 cup provide 1 oz grain, 1.5 oz meat/ meat alternate and 1/2 cup vegetable for a 3-5 year old at lunch/supper.
