Bold Black Bean Dip

 




Ingredients:

1/2 15-ounce can (3/4 cup) rinsed and drained black beans
2 tablespoons chopped small red bell pepper
1/2 tsp cumin
1 1/2 Tbsp lime juice
1 Tbsp olive oil
1/2 tsp minced garlic
3 cups sugar snap peas

Directions:

Combine all ingredients (except sugar snap peas) in food processor and process until smooth, about 1- 2 minutes. Serve with whole sugar snap peas.


Yield: 3/4 cup dip
Serving Size: 2 tablespoons dip and 1/2 cup sugar snap peas provide 0.5 oz meat/meat alternate and 1/2 cup vegetables for a 3-5 year old at snack.
