Cucumber Canoes

 




Ingredients:

1 1/2 large cucumber
3/4 cup cottage cheese
6 (cut in half lengthwise, baby carrot(s)

Directions:

1. Cut cucumbers in half lengthwise and scoop out the seeds.
2. Fill the "canoe" with the cottage cheese. Lay baby carrots on top for the "paddles"
3. Cut both cucumber halves into 4 pieces, crosswise and the half cucumbers into 2 pieces.


Yield: 12 mini canoes
Serving Size: 2 mini canoes is 0.5 oz meat/meat alternate and a 1/2 cup vegetable for a 3-5 year old at snack
