Pineapple Cottage Cheese Yummies

 




Ingredients:

18 rings of canned pineapple
1 1/2 cups cottage cheese

Directions:

Pat dry the pineapple rings. Reserve 12 rings. Place 6 pineapple rings on individual plates. Scoop 1/8 cup cottage cheese into the center of each ring. Top each with a second pineapple ring to make a sandwich. Scoop another 1/8 cup cottage cheese into the center of the second ring and top with another pineapple ring to make a double decker "sandwich."


Yield: 6 ring sandwiches
Serving Size: 1 ring sandwich provides 0.5 oz meat/ meat alternate and 1/2 cup fruit for a 3-5 year old at snack.
