Karate Chopped Salad

 

Ingredients:

1 1/4 c. mixed greens or lettuce
1 c. chopped tomato(es)
3/4 c. chopped carrot(s)
1/4 c. chopped bell pepper
3/4 c. chopped cucumber
1/2 Tbsp. non-fat plain yogurt (less than 3.83 gm sugar per oz)
1 Tbsp. lemon juice

Directions:

1. Chop all vegetables.
2. Combine all vegetables in a large bowl.
3. Chill until ready to serve.
4. Combine yogurt and lemon juice in small bowl. Pour over salad.
5. Toss to coat.


Yield: 3 1/4 cups
Serving Size: 1/3 cup salad is 1/4 cup vegetable for a 3-5 year old at lunch/supper.
