Place kale, peppers, green onions, eggs, garlic, mustard, salt and pepper in the food processor.
Pulse until kale is finely chopped.
Remove to a large mixing bowl and add ground beef.
Mix well and roll into 1 oz meatballs.
Place on a lightly greased sheet pan and bake at 450 degrees for 8-9 minutes.
Yield: 24 meatballs
Serving Size: 6 meatballs is a 1.5 oz meat/meat alternate for a 3-5 year old at lunch/supper.
