Zucchini Pie

 

Ingredients:

1 c. chopped zucchini
1 c. chopped tomato(es)
1/2 c. chopped onion
1/3 c. Parmesan cheese
2/3 c. baking mix
3/4 c. milk
4 egg(s)
salt and pepper to taste

Directions:

Heat oven to 400 degrees. Lightly grease bottom and side of pie plate. Sprinkle zucchini, tomato, onion and cheese evenly in pie plate. Stir together remaining ingredients with fork until blended. Pour evenly into pie plate. Bake about 35 minutes or until knife inserted in center comes out clean. Cool at least 10 minutes.


Yield: 6 slices
Serving Size: 1 slice is 1/4 cup vegetable and 1.5 oz meat/ meat alternate for a 3-5 year old at lunch/supper
