Preheat the oven to 350 degrees F. Melt butter in a skillet over medium heat. Cook the zucchini in butter until browned and slightly tender. Spoon 1/8 of the zucchini mixture into each roll. Cover zucchini with about 1/4 cup marinara sauce per roll. Top with 1/2 cup shredded mozzarella. Close the rolls, and wrap individually in aluminum foil.
Bake for 15 minutes in the preheated oven, until bread is heated through, rolls are soft, and cheese is melted.
Yield: 8 grinders
Serving Size: 1 grinder is 1 oz grain, 1.5 oz meat/ meat alternate and 1/4 cup vegetable for a 3-5 year old at lunch/supper
