Chicken Bites

 

Ingredients:

1 lb. boneless, skinless chicken breast
1/2 c. plain yogurt (less than 3.83 gm sugar per oz)
1 c. crush cereal crumbs
salt and pepper or other seasoning to taste
dipping sauce

Directions:

Preheat oven to 400 degrees F. Spray a baking sheet with nonstick coating. Cut chicken into bite-sized pieces (18 pieces total) and place in large bowl of ice water. Place cereal crumbs and seasoning in a shallow bowl or plastic bag. Dip chicken pieces in yogurt and then shake in crumbs to coat. Place on baking sheet and spray chicken with nonstick spray to coat. Bake 30 minutes or until cooked through, turning once.


Yield: 18 chicken bites
Serving Size: 3 bites is 1.5 oz. meat/ meat alternate for a 3 - 5 year old at lunch/supper.
