In a medium skillet, brown ground beef. Drain and rinse meat.
Return to skillet and add tomato sauce, tomato paste, mustard, vinegar, and dates. Mix together and simmer over medium-low heat.
Add carrots, zucchini and all seasonings. Stir until well mixed.
Mash half of an avocado and fold into sloppy joe mix. Heat and serve. Place 1/2 c. filling on each sandwich.
Yield: 8 servings
Serving Size: 1/2 cup filling is 1.5 oz meat/meat alternate and 1/4 cup vegetable for 3-5 year old at lunch or supper.
