In large skillet heat oil over medium-high heat. Add turkey; stir-fry 2 - 3 minutes or until no longer pink. Stir in chicken broth, soy sauce, sugar, ginger, garlic powder and vegetables. Bring to a boil; stir in pasta. Reduce heat; cover. Simmer 5 - 8 minutes or until pasta is tender. In small bowl combine cornstarch and water; blend until smooth. Stir into hot mixture in skillet. Cook 1 minute or until thickened, stirring constantly.
Yield: 6 servings
Serving Size: One serving (1/6 of low mein) is 1.5 oz meat/ meat alternate, 1/4 cup vegetable and 1 oz grain for a 3 - 5 year old at lunch supper.
