Pineapple Salad

 

Ingredients:

1 (16 oz) can drained, chunked pineapple
1 (11 oz.) can drained mandarin orange(s)
1/4 c. shredded coconut
1/2 cup vanilla yogurt (less than 3.83 gm sugar per oz)

Directions:

Place drained fruit in a bowl with shredded coconut; toss gently to mix. Place in individual serving dishes; top with a dollop of yogurt. Serve.


Yield: 3 cups
Serving Size: 1/2 cup salad is 1/2 cup fruit for a 3-5 year old at breakfast/snack. 1/4 cup salad is 1/4 cup fruit for a 3-5 year old at lunch/dinner.
