Heat oven to 350 degrees. Grease and flour 12 regular size muffin cups or line with liners. Whisk flour, baking powder, baking soda in a small bowl until blended. Beat margarine until pale. Gradually add sugar; beat until fluffy. Reduce mixer speed to medium, beat in eggs one at a time just until blended; then beat in lemon peel, juice and extract. Reduce mixer speed to low. Alternately add flour mixture and yogurt beginning and ending with flour, beating until just blended. Spoon batter into prepared cups. Bake 20 minutes or until toothpick inserted in center comes out dry.
Yield: 12 muffins
Serving Size: One muffin provides a grain serving for a 3-5 year old at breakfast or snack.
