Ricotta Breakfast Parfait

 

Ingredients:

2 Tbsp. skim milk
1 Tbsp. honey
1 1/2 tsp. orange zest
1 c. part skim ricotta cheese
2 c. sliced fruit
1 1/3 c. cereal

Directions:

In a blender measure milk, cheese and honey. Blend until smooth. Mix in orange zest. Layer cheese mixture, fruit and cereal in bowl, repeat layers. Use a clear narrow container for best results.


Yield: 4 parfaits
Serving Size: One parfait is 1/2 cup fruit and 0.5 oz grain for a 3 - 5 year old at breakfast.
