Cranberry Bread
One slice is a grain serving for a 3 - 5 year old.
2 c. flour
1 1/2 tsp. baking powder
3/4 c. orange juice
2 Tbsp. shortening
1 1/2 c. fresh or frozen cranberries
1 c. sugar
1/2 tsp. baking soda
1 Tbsp. orange peel
1 well beaten egg(s)
1/2 c. chopped nuts, optional
Preheat oven to 350 degrees. Mix flour, sugar, baking powder, salt and baking soda together. Stir in orange juice and peel, shortening and egg. Mix until well blended. Coarsely chop the cranberries. Stir cranberries and nuts into batter. Turn into a 9" x 5" loaf pan, greased on the bottom only. Bake for 55 minutes or until toothpick inserted in center comes out clean. Cook on rack 15 minutes; remove from pan.
