1 1/4 lb. hamburger
2 c. tomato sauce
1/2 c. tomato paste
1/4 c. yellow or dijon mustard
2 Tbsp. vinegar
5 finely chopped dates
1/2 c. shredded carrot(s)
1/2 c. shredded zucchini
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/2 tsp. sea salt
1/4 tsp. pepper
1/2 avocado
In a medium skillet, brown ground beef. Drain and rinse meat.
Return to skillet and add tomato sauce, tomato paste, mustard, vinegar, and dates. Mix together and simmer over medium-low heat.
Add carrots, zucchini and all seasonings. Stir until well mixed.
Mash half of an avocado and fold into sloppy joe mix. Heat and serve. Place 1/2 c. filling on each sandwich.
