Taco Soup

 

   Serving Size:
1 cup soup is 1.5 oz meat/ meat alternate and 1/4 cup vegetable for a 3 - 5 year old at lunch/supper.

 

   Yield:
12 cups

 


 

Ingredients:

1 lb. ground turkey
1 pkg. regular or reduced sodium taco seasoning mix
1 pkg. Ranch salad dressing mix
1 (15 oz.) can black beans
1 c. frozen corn
1 can (15.5 oz.) great northern beans
1 can (15.5 oz.) pinto beans
1 (16 oz.) can vegetable or chicken broth
1 (28 oz.) can stewed tomatoes or tomatoes with chilies

Directions:
Brown turkey in a large stockpot. Drain excess fat. Add taco and Ranch seasoning mix to turkey. Drain and rinse canned beans and add to turkey mixture in stockpot. Add all remaining ingredients and bring to a boil until hot. (You may add water as needed for desired consistency.) Serve warm, sprinkled with cheese and crushed tortilla chips if desired.
