1 wrap provides 1 oz grain, 1.5 oz meat/ meat alternate and 1/4 cup vegetable for a 3-5 year old at lunch/supper.
6 (8 inch) whole wheat flour tortilla(s)
1 pgk. taco seasoning
2 medium, chopped tomato(es)
1/2 c. black beans
1/3 c. sliced green onions with tops optional
1 tsp. green chilies
1 tsp. cilantro
1 lb. chopped breast of chicken
Combine tomatoes, chilies, green onions (optional) and cilantro; set aside. Cook chicken for two minutes in 1 tablespoon vegetable oil over medium-high heat. Add 2 tablespoons water and chicken taco spices; combine well. Continue to cook until chicken is cooked through. Add tomato mixture, beans and heat 2 minutes stirring occasionally. Place 1/2 cup filling on each tortilla and roll up and serve.
