One serving (1/8 of recipe) is a 1.5 oz. meat/ meat alternate and one 1/4 cup vegetable for a 3-5 year old at lunch/supper.

Ingredients:
20 oz. frozen chicken breast
1 (15 oz.) can drained black beans
1 (15 oz.) can drained mexicorn or corn
1 (15 oz.) jar salsa
1 (8 oz.) pkg. light cream cheese
Directions:
Place chicken breasts into crock pot. Add black beans, corn, and salsa. Cook on high in crock pot for 4-5 hours or until chicken is cooked. Add cream cheese on top about 30 minutes before serving. Serve on rice or on top of tortilla chips.
Notes: For a spicier version add some taco seasoning on top of the chicken and use a medium hot salsa. For a less creamy version, reduce the amount of cream cheese.
