Quinoa Breakfast Cereal
1/4 cup cooked quinoa is a grain serving for a 1-5 year old at breakfast or snack.
1 cup quinoa
1 c. milk
2 cups cold milk
1/4 tsp. salt
2 Tbsp. sunflower seeds
1/4 cup (such as raisins, dried cranberries, apricots or pineapple) dried, chopped fruit
Rinse the quinoa in cold water stirring the grains around a bit with the spoon; drain well. Place quinoa in a 1 - 1 1/2 quart saucepan; add water and salt if desired. Bring to a boil, cover with a tight fitting lid and turn the heat down to simmer. Cook for 15 minutes. Drain any excess liquid. Add the remaining ingredients and heat on medium low until milk is absorbed and dried fruit is plump, adding additional milk if desired. Fluff with fork and serve.
