Ingredients:
1/2 cup chopped onion
2 1/2 cups cooked diced chicken
1 cup uncooked brown rice
1 Tbsp. vegetable oil
2 cups chicken broth
1 cup shredded Cheddar cheese
Directions:
Heat vegetable oil using a medium saucepan. Add chopped onion and cook until tender. Add the broth; bring to a boil. Add the rice; cover the pan and cook on low heat until the rice is tender about 35 - minutes. Remove from heat and let stand 10 minutes. Stir in chicken and top with cheese. Cover and let stand 5 minutes until cheese is melted.
