Tropical Salmon

 

   Serving Size:
1 filet is 1.5 oz meat/meat alternate for a 3-5 year old for lunch/supper.

 

   Yield:
6 filets

 


 

Ingredients:

1/2 chopped mango optional
1 Tbsp. red onion
1/2 cup fresh, or frozen, chopped peach(es)
2 Tbsp. parsley
1/4 cup black beans
1 Tbsp. lime juice
3/4 lb. frozen fillets salmon
1/8 tsp. salt
cooking spray

Directions:
In a medium bowl, stir together salsa ingredients (mango, peaches, onion, parsley, black beans and lime juice). Rinse fish, pat dry. Portion into 6 pieces. Season with salt and pepper. Preheat oven to 350 degrees F. Line baking sheet with foil. Spray with cooking spray. Place fillets skin side down on baking sheet. Cook about 15 to 20 minutes, until fish flakes with fork. Place fish on plate, spoon salsa on top.
