Gingerbread Pancakes
One pancake is a grain serving for a 3-5 year old for breakfast.
1/2 cup all-purpose flour
1 cup whole wheat flour
3/4 tsp. baking soda
1 Tbsp. ground cinnamon
1 whole egg(s)
1 egg white(s)
1 Tbsp. molasses
1 1/2 Tbsp. canola oil
1/2 cup 1 % (low-fat) or skim milk
Mix dry ingredients in bowl. In a different bowl, beat eggs. Add egg whites and mix slowly; be careful not to over mix. Stir in molasses, oil and milk. Pour milk mixture into dry ingredients, stir. Bake on a hot, lightly greased griddle.
