Colorful Crispy Salad
1/3 cup salad is 1/4 cup vegetable for a 3-5 year old at lunch/supper.
1 cup diced tomato(es)
1 cup diced cucumber
1/2 cup chopped red bell pepper
2 Tbsp. canned olives
1 cup chopped lettuce
1 Tbsp. olive oil
1/2 Tbsp. vinegar
1/2 tsp. oregano
Place all salad ingredients (tomato, cucumber, bell pepper, olive and lettuce) into a bowl. In a separate bowl, mix dressing ingredients (oil, vinegar, oregano) together. Pour dressing over salad. Toss to coat.
