2 Tbsp. olive oil
1/2 c. sliced sweet onion
1 1/2 c. small chopped broccoli
3/4 c. small chopped any color bell pepper
1/4 tsp. Italian seasoning
3/4 c. kidney or black beans
1 1/2 c. cooked bow tie pasta
1 1/2 c. cheddar cheese
Directions:
Heat oil in large skillet on medium/high heat. Add onions, broccoli, peppers, Italian seasoning; cook for 5 minutes or until broccoli and onions are tender. Add beans and cooked pasta, and cook until beans and pasta are heated through. Add cheese and stir to combine.
