1 lb. cod fish fillets
1/2 c. finely crushed seasoned bread crumbs
1/2 c. finely crushed corn flake crumbs
3 Tbsp. Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
2 egg(s)
2 Tbsp. of milk
Preheat the oven to 375 degrees. Cut the fish fillets into 24 “sticks”, lightly salt and set aside.
In a shallow bowl, combine the finely crushed bread crumbs, corn flakes, Parmesan cheese and pepper; mix well. Make an egg wash by beating two eggs and milk together in a shallow bowl. Dip a few fish sticks at a time into the egg wash, then into the crumb mixture and coat with crumbs. Place on a greased baking sheet. Bake for 15 to 20 minutes or until lightly browned.
