Crunchy Bok Choy Slaw
1/4 cup is a vegetable for a 3-5 year old at lunch/supper
2 Tbsp. rice vinegar
1 1/2 tsp. sesame oil
1 tsp. sugar
1 tsp. Dijon mustard
salt to taste
1 bunch thinly sliced bok choy
2 medium shredded carrot(s)
Whisk vinegar, oil, sugar, mustard and salt in a large bowl until the sugar dissolves. Add bok choy and carrots; toss to coat with the dressing.
