Corn and Green Bean Casserole

 

   Serving Size:
1/4 cup casserole is 1/4 cup vegetable for a 3-5 year old at lunch/supper.

 

   Yield:
5 1/2 cups

 


 

Ingredients:

1/2 c. low fat mayonnaise
1/2 c. shredded cheddar cheese
1 c. chopped celery
1/4 c. chopped onion, optional
1 lb. thawed corn
1 lb. thawed French cut green beans
1/2 c. dried bread crumbs
2 Tbsp. melted margarine

Directions:
Mix mayonnaise, cheddar cheese, celery and onions in large bowl. Add corn and green beans and mix thoroughly. Place in sprayed 2 quart casserole. Mix bread crumbs with margarine; sprinkle on top of vegetable mixture. Bake at 350 degrees for 40 minutes.
