2 lbs. (about 3 medium) sweet potato(es)
1 tsp. olive oil
1 1/2 tsp. salt free Creole seasoning or cinnamon sugar
Wash, trim and cut out any bad spots on the potatoes. Cut into 3-4 inch strips about 1/4 inch thick. Place in bowl or plastic bag with olive oil; toss to coat. Arrange in single layer, skin side down on non-stick pan. Sprinkle with seasoning. Bake at 400 degrees for 30 - 40 minutes. Flip after 20 minutes if desired.
